Job Description:

·         Cost control

·         Purchasing and verifying quantity and quantity of products

·         Pricing of merchandise

·         Creating menus and justifying cost control

·         Organizing staffing requirements on an ongoing basis

·         Ordering supplies and dealing with suppliers

·         Assuring that all areas are closed down properly at the end of each shift

·         Assuring that all areas are opened properly at each shift

·         Making sure that proper quantities of products are always on hand

·         Continual training on food preparation

·         Cleaning as required

·         Plan and direct food preparation and cooking activities

·         Consult with general manager regarding weddings, banquets and specialty functions

·         Plan menus and ensure food meets quality standards

·         Estimate food requirements and may estimate food and labour costs

·         Supervise activities of sous-chefs, specialist chefs, chefs and cooks

·         Arrange for equipment purchases and repairs

·         Recruit and hire staff

·         May prepare and cook food on a regular basis, or for special guests or function

Requirements

·         Completion of Secondary School;

·         Must have experience in the hospitality industry;

·         3-5 years of experience as a chef in a fine dining room kitchen;

·         In-depth knowledge of Mediterranean cuisine

·         Ability to work under pressure in a fast-paced environment;

·         Vocational training or certificate in culinary arts is an asset;

·         Must be available to work evenings, weekends and holidays.
