Manage Daily Kitchen Operations


  • Ensuring all products are being prepared consistently to standard

  • Maintaining up-to-date recipes for all menu items, ensuring recipes are used at time of preparation

  • Managing Point of Sale and system updates with General Manager

  • Overseeing Back of House (BOH) equipment maintenance

  • Following and enforcing all restaurant policies and procedures

  • Presenting online during service as Expo or Float

  • Maintaining pristine working conditions for Back of House


Controlling Profit and Loss


  • Reviewing and evaluating supplier pricing every 6 to 12 months alongside the General Manager

  • Maintaining optimal labour percentages; overseeing BOH scheduling, avoiding overtime

  • Ensuring par ordering levels are maintained and all incoming stock is checked

  • Overseeing inventory reporting and addressing any variance

  • Meeting established targets on Cost of Goods Sold


Hiring and Retaining Awesome Team Members


  • Hiring and training top talent for all Back of House positions

  • Training all cooks on the proper and consistent execution of all dishes and traditional techniques

  • Following onboarding procedures and setting up new employees for success

  • Developing Sous Chefs and all BOH employees, including succession planning


Menu Development


  • Developing a menu featuring culturally relevant and authentic Jamaican dishes

  • Working alongside the Executive Chef for seasonal menu changes

  • Coordinating with General Manager regarding any new menu item rollouts


Maintain Safe Workplace


  • Ensuring BOH representation in Health & Safety Meetings

  • Enforcing safe food handling policies and procedures

  • Managing compliance with workplace harassment and violence policy 




  • Minimum 5 Years of Sous Chef/Chef de Cuisine experience in a comparable business

  • High level of knowledge of Jamaican Cuisine

  • Skillful technical culinary foundation

  • Strong leadership and communication skills

  • Culinary arts certificate is an asset
