Duties:

·         Preparing fillings and batters and baking dough for pies, bread, rolls and sweet goods, batters for muffins, cookies and cakes and icings and frostings according to recipes or special customer orders

·         Monitoring and determining the product production numbers including special orders and coordinating with owner to plan the baking staff schedules in order to achieve the production numbers required

·         Overseeing and partaking in the decorating, packaging and general preparation of all products for final sale in the bakery

·         Ensuring the quality of all products meet the established standards

·         Purchasing baking supplies

·         Maintaining production space cleanliness and ensuring that the company is exceeding standards set by Health Canada

·         May oversee sales and merchandising of baked goods

·         Assisting with the hiring, training, and supervising of new baking staff and ice-cream-production staff

Requirements

Requirements:

 

·         1+ years of baking experience and pastry arts, including experience training and managing a small kitchen staff of at least 3 bakers

·         Previous training within a bakery, confectionary or a related setting is required

·         Working knowledge of and familiarity with, various sizes of commercial stand mixers and hand mixing devices

·         Working knowledge and familiarity with induction burners, convection ovens, and traditional element ovens

·         Attention to detail, a steady hand and manual dexterity are required; must be comfortable painting cake plaques with food colouring, working with fondant, icing, meringues, chocolate drizzles and frosting design

·         Basic knowledge of front of house activities is required, including customer service, order-taking procedures and merchandising experience in order to correlate activity with the kitchen staff

·         Experience in Italian style gelato and ice cream production is an asset

·         Familiarity with both Taylor and Carpagiani batch freezers is an asset
