Job Duties and Responsibilities:

 

Mastro Roberto Trattoria & Pizzeria is located in one of Toronto’s fastest growing and most diverse neighbourhoods. By using fresh, local and international ingredients and imported authentic Italian products, we allow our customers to experience our unique brand of ‘la buona cucina casareccia’ – Good Home Cooking!

 

Our growing team requires the services of a skilled Pizza Chef, with knowledge of Italian cuisine and a passion for creating authentic artisan pizza using traditional Italian ingredients. Our restaurant is one of the few restaurants in the Greater Toronto Area that uses the one of a kind technology of the PEVA oven - the finest wood-fired oven in the industry. Therefore experience using the PEVA specialty wood burning pizza oven is required. The Pizza Chef will be responsible for creating, preparing and cooking traditional Italian artisan pizza while maintaining a safe, clean, and sanitary work environment.

Requirements

The Pizza Chef will perform some or all of the following duties:

 

o   Preparing and cooking authentic Italian pizza on a regular basis and for special guests or functions;

o   Using the PEVA speciality wood-burning oven;

o   Creating artisan pizzas based on fresh, local and traditional Italian ingredients;

o   Instructing cooks in the preparation, cooking, garnishing, and presentation of Italian pizzas;

o   Maintaining inventory of food, supplies and equipment;

o    Maintaining a safe, clean kitchen and ensuring food meets quality standards;

o    Supervising cooks and other kitchen staff; and

o    Assisting with the recruitment and hiring of staff.

Employment Requirements

 

o   Minimum five (5) years of experience as a pizza chef in an Italian restaurant required;

o   Experience using a PEVA wood oven and creating traditional Italian artisan pizzas, with knowledge of traditional dishes from various regions of the Northern, Central and Southern regions of Italy;

o   Knowledge of food costs, ordering, inventory management, working schedules, and menu creation required;

o   Ability to work under pressure in a fast-paced environment;

o   Must be available to work evenings, weekends, and holidays;

o   Fluency in Italian and/or work experience in Italy is not required but considered an asset.
