The newest addition to the Gusto 54 Restaurant Group is an exciting and fresh Jamaican restaurant, Chubby's Jamaican Kitchen. We are bringing a taste of Jamaica to Toronto by providing authentic Jamaican Cuisine with modern twists in a fun and inviting environment.

Overview

We believe that our kitchens are only as good as their leadership team. In the role of Sous Chef, your primary objective is to support the Chef de Cuisine, and lead the kitchen in his/her absence to the same standards of execution. A Sous Chef must be a creative person with a passion for amazing food, who has strong technical and leadership skills to match.

The Scope of the Role and Responsibilities are as follows:

  • Promotes Guest Satisfaction by ensuring all food is executed to standard 
  • Coaches employees on traditional Jamaican cooking techniques 
  • Meets food cost target through maintaining inventory and ordering systems 
  • Support Executive Chef in Menu development 
  • Trains all cooks on the proper and consistent execution of all dishes 
  • Maintaining a spotlessly clean kitchen and back of house 
  • Adhering to all food handling and health & safety procedures 
  • Maintenance of equipment and building, scheduling repairs as needed 
  • Review and evaluate vendor/supplier pricing on regular basis 
  • Implement plans and corrective actions to address any inventory variances 
  • Manage labour cost through scheduling 
  • Conducting Line Checks and Pre-shift meetings prior to service 
  • Fostering an atmosphere of hard work, discipline, respectful communication, cooperation and positivity amongst all staff 
  • Demonstrating high level of self-discipline in work habits, work quality, and the pursuit of new professional knowledge & skills 
  • Commit to permanent, full time hours of 40 hours per week
Requirements

  • 3 + Years Sous Chef/Chef/Executive Chef prior experience 
  • Expertise in Techniques of Jamaican Cooking and Cuisine 
  • Solid technical culinary foundation 
  • Strong Leadership and Communication skills 
  • Valid Food Handlers Certification
