Sous Chef

  • Monday to Friday from 7 a.m. to 3:30 p.m.;
  • Must be available for some corporate evening cocktail events in order to assist with service.

Role Summary

Reporting to the Manager, Food and Beverage, the Sous-Chef assists in setting and maintaining the highest levels of kitchen standards. The Sous-Chef will take part in creating a variety of healthy yet hearty menus that will satisfy Groupe Dynamite employees. The Sous-Chef will lead other kitchen workers in an organized, respectful, and professional manner, and will report vital information to the Manager, Food and Beverage.


  • Responsible for all daily operations of the kitchen, and must be able to perform any kitchen-related tasks if needed;
  • Plan and create various menus that display originality;
  • Ensure that food leaving the kitchen is of the highest quality and will satisfy the customers;
  • Responsible for allergy identifications on all meals where needed;
  • Plan and direct food preparation for the day and upcoming days;
  • Manage kitchen staff to ensure food is prepared properly, effectively and on time for services;
  • Train new employees and create the schedule to ensure adequate staffing for the kitchen;
  • Perform, control and optimize the monthly food inventory in order to minimize food waste;
  • Optimize the use of materials and labour force, thereby maximizing revenue;
  • Ensure and maintain the highest level of kitchen cleanliness at all times;
  • Clean the kitchen floors and keep the area safe and clear of clutter on a regular basis to prevent accidents;
  • Teach health and safety principles and ensure that they are well respected by all employees at all times;
  • May perform other duties as assigned such as service, special events, replacements, cash register during peak periods, etc.;
  • Filled up the order form for catering;
  • May need to be available some evenings for special events.

  • College degree in a professional cooking program;
  • 5 years of experience cooking in a professional kitchen;
  • 1 to 2 years of management experience;
  • Experience in vegetarian, international cuisine and health-conscious cooking;
  • Able to use Excel, Word and Outlook, as well as the Internet;
  • Health and hygiene certificate;
  • Food and hygiene training certification;
  • Good communication skills, able to make decisions, as well as display leadership skills and work within a team;
  • Team player;
  • Innovative, creative, proactive and reliable;
  • Ability to work well under pressure;
  • Knowledge of food cost and P&L KPIs;
  • Goal oriented, versatile, and resourceful.
