Duties:
· Supervise activities of sous-chefs, specialist chefs, chefs and other kitchen staff;
· Consult with clients regarding weddings, banquets and specialty functions;
· Plan and direct food preparation, and ensure food meets quality standards;
· Prepare and cook Italian dishes on a regular basis, or for special guests or functions;
· Arrange for equipment purchases and repairs;
· Assist with the recruitment and hiring of staff.
Requirements· Minimum five (5) years of experience as a chef, in an Italian restaurant;
· In-depth knowledge of Italian foods, ingredients and spices;
· Prior catering experience for parties over 100 guests;
· Knowledge of food costs, ordering, inventory management, working schedules, and menu creation;
· Strong communication, organizational and time management skills;
· Ability to work under pressure in a fast-paced environment;
· Vocational training or certificate in Italian cuisine is an asset;
· Must be available to work evenings, weekends and holidays.
