As a Chef de Partie, you are entrusted with full responsibility for your section. Your role is essential in shaping the identity of the cuisine and ensuring the highest level of consistency and execution. You will evolve in an environment where rigor, taste, and attention to detail define every aspect of the work.
You will work alongside Chef Riccardo Bertolino.
Key Responsibilities
Culinary Execution
- Execute your mise en place and service with precision and consistency
- Demonstrate strong technical control over cooking, seasoning, and plating
- Approach each preparation with a clear understanding of balance, flavor, and refinement
Discipline & Organization
- Maintain a workstation that is clean, structured, and performance-driven
- Apply the highest standards of hygiene and sanitation (MAPAQ)
- Contribute to a kitchen environment defined by discipline and professionalism
Ownership & Accountability
- Take full ownership of your section, anticipating the needs of service
- Ensure the quality, integrity, and proper handling of all products
- Work with precision and intention, minimizing waste and maximizing product value
Team & Transmission
- Operate as part of a cohesive brigade, supporting fluid and efficient service
- Show commitment to continuous learning and self-improvement
- Contribute to the development and training of demi-chefs de partie and commis
