We are seeking an Executive Sous-Chef. You will join our dynamic team as an experienced leader. As the Executive Sous-Chef, you will play a key role in supervising the kitchen team and assisting in the daily management of operations. You will work closely with the Executive Chef to lead the creation and execution of menus, ensure efficient use of resources, and maintain exceptional quality standards. Your ability to support the Executive Chef and lead in their absence will be essential to ensuring the smooth operation of our kitchen.
WHAT YOU'LL DO
- Assist the Executive Chef in all functions and ensure continuity and operational excellence in their absence.
- Collaborate with the Executive Chef to develop and adjust menus based on seasons, culinary trends, and customer preferences.
- Actively supervise dish preparation to ensure consistent quality, following established recipes and applying advanced culinary techniques.
- Proactively manage supplies, food costs, and ingredient storage to optimize operational efficiency.
- Take responsibility for human resource management in the department, including hiring staff, performance evaluation, conflict management, etc.
- Develop the technical and non-technical skills of the team members.
- Ensure rigorous inventory management to minimize losses (food, equipment, dishware, household products).
- Plan and supervise schedules and task distribution to achieve productivity goals.
- Ensure strict adherence to food safety, hygiene, and cleanliness standards throughout the kitchen.
- Motivate and inspire the team to maintain high standards by providing continuous support, guidance, and training.
- Collaborate closely with other departments to ensure a consistent and exceptional culinary experience for our guests.
- Represent the establishment at special events, always ensuring a professional presence and culinary excellence.

Requirements
WHAT WE ARE LOOKING FOR
Minimum of 8 years of cooking experience in a similar high-volume environment
Minimum of 3 years of experience as an Executive Sous-Chef, if no experience as an Executive Chef
Experience in a 4 or 5-star hotel.
MAPAQ Hygiene and Sanitation Certificate
Strong ability to work in a team and ensure smooth communication, with proficiency in French and English for communication with international suppliers.
Demonstrated leadership skills, fostering team development and motivation.
Excellent stress management, ability to work calmly and maintain high performance in busy periods.
Developed organizational skills for efficient work and meeting deadlines.
Energy, endurance, and availability for a demanding role, with flexible hours including evenings, weekends, and holidays.
