Job description

The Garde Manger Chef is responsible for the preparation and presentation of all cold dishes, including antipasti, salads, cold appetizers, dressings, ensuring the highest standards of freshness, quality, and Italian culinary authenticity.

  • Prepare and assemble all cold menu items, including antipasti, salads, carpaccios, crudo, and other classic Italian cold dishes.

  • Portion, arrange, and garnish cold food for service in an attractive and consistent manner.

  • Maintain mise en place for the cold station, ensuring freshness and proper storage of all ingredients.

  • Prepare house-made dressings, vinaigrettes, and cold sauces according to recipes and standards.

  • Assist with preparation of house-cured meats, terrines, or marinated vegetables if applicable.

  • Ensure all cold items are prepared and stored in compliance with food safety standards.

  • Collaborate with the kitchen team to coordinate timing of dishes during service.

  • Maintain cleanliness and organization of the cold station and refrigeration units.

  • Receive and properly store daily deliveries for the cold kitchen items.

  • Follow recipes and portion controls to minimize waste and control food costs.

  • Support other kitchen stations as needed and perform other duties assigned by the Head Chef.

  • Requirements

    • Proven experience as a Garde Manger, Cold Station Cook, or similar role in a professional kitchen (Italian cuisine experience preferred).

    • Strong knowledge of Italian cold dishes, ingredients, and presentation styles.

    • Excellent knife skills and attention to detail.

    • Ability to work efficiently and maintain composure under pressure.

    • Good understanding of food safety and hygiene standards.

    • Team player with good communication skills.

    • Flexibility to work evenings, weekends, and holidays as required.
