Job description

The sous-chef plays a vital role in the day-to-day management of the Cour Arrière Restaurant kitchen, with a particular focus on banquet services. Under the direction of the head chef, the sous-chef contributes to creating an exceptional culinary experience for our guests, ensuring the quality, presentation, and consistency of the dishes served.

Key Responsibilities:

- Culinary production supervision: Collaborate with the head chef to plan and organize kitchen operations, including menu preparation for banquets. Oversee food preparation to ensure quality and adherence to presentation standards.

- Kitchen team management: Supervise and lead the kitchen staff, including line cooks and kitchen assistants, to ensure tasks are performed efficiently and in compliance with food safety policies.

- Staff training: Participate in ongoing training of kitchen staff, ensuring team members acquire the necessary skills to excel in their respective roles.

- Inventory management: Assist in managing ingredient stocks and kitchen supplies, ensuring stock levels are adequate to meet operational demand.

- Cost control: Collaborate with the head chef to control food costs, minimizing waste and maximizing efficient ingredient use.

- Food safety and hygiene standards: Ensure all kitchen operations adhere to food hygiene and safety standards, maintaining cleanliness and safety in all aspects of work.

- Collaboration with other departments: Work closely with sales and service departments to coordinate banquet needs and ensure a smooth and seamless guest experience.

Requirements

  1. Previous experience in the kitchen, with at least 3 years of experience as a chef de partie or in a similar position.
  2. Strong management and leadership skills, with the ability to motivate and lead a team.
  3. In-depth knowledge of culinary techniques, food hygiene standards, and safety practices.
  4. Ability to work effectively in a dynamic environment and handle multiple tasks simultaneously.
  5. Excellent communication and problem-solving skills.
  6. Flexibility to work according to a variable schedule, including weekends and holidays.
